I’m currently almost 10 days into my original game (9d 23h 11m 01s, to be exact); I don’t know if that qualifies as mid-game or late-game. I’m holding fast at v1.6 for now, with a small handful of mods installed.
Lately, several of my stations have started getting critically low on resources — mainly ore and silicon. Stations that have not had this problem previously, and have been humming along just fine for quite some time.
For now, I’ve compensated by simply adding a few additional Station Miners to the stations in question. That seems to work, but it’s too early to tell if it’s a permanent fix or a band-aid on a larger problem. I’m under the impression that resources re-spawn over time, so I’m assuming it will balance out eventually. But who knows?
I’m curious if others have observed the same thing, and how you handled it.
And for those of you that have continued existing games in v2.x, how has the reduced gathering range for Station Miners affected you? Many of my most profitable stations were placed where the Station Building Missions insisted they be placed, and they’re not all particularly well-positioned with regard to resources. It works fine in v1.60, but…
I need to start planning for the transition, as v2.2 looks very compelling. I have no desire to start a new game. My goal is to keep going with this one, and my Station Miners must be able to continue gathering the resources required for their stations.

Station building missions do not let you keep the station. This was a bug that has been fixed. Hence you do not care about how much profit they make after they are built.
Resource fields replenish over time. There is a theoretical maximum to how many miners can operate in an area of space efficiently, hence why auto miners space out.
What likely happened to you was that the growing AI economies have resulted in more resources being mined by the AI from the same fields your station uses meaning that the station miners have to travel further abroad to gather and hence mine less efficiently. The solution, as you correctly guessed, is to simply add more miners to the station. Another more limited solution is to add faster engines to the miners (Argon Travel Mk3) if not using them already so they spend less time traveling, but unless using a player owned warf it usually is more profitable to add more miners instead.

Just dump those, and use autominers. Start them in your station's sector with 0 sell and whatever gather limit you see fit.
This solved my issues in couple 10 mins.
Station miners just refused to gather silicon and ice for ex., they only brought in ore in my case. With a couple autominers dedicated to ice and silicon this problem got solved quick.
Generally any station script is bad, they don't function on an acceptable level.

The manager assignment algorithms may need a little tweaking
I had a station that needed Helium & Methane
Every gas miner assigned as a subordinate went off to collect Helium, none of them were tasked with scooping Methane
