Two monitor Puzzle
Help how do I get the game to cover my two monitors it seem to only open on one screen leaving the desktop on the other

First you need a software driver (Hydravision, Eyefinity, etc) that enables multi-monitor support. I am not a user of them so others would have to advise further.
Next, 2 monitors is a bad idea anyway. You would just have the single view spread over the 2 screens as you cannot for example have a command menu or a sub-monitor open in one and the cockpit view in the other. With 2 screens the central boresight and area of most interest would be over the screen join. Screens of different sizes/resolutions would look very odd too.
What most multiscreen users do is use 3 screens with a widescreen large fov view stretched across all 3 screens. Hence, a forward cockpit main central view and the other 2 screens as 'side windows' with the sub-monitors and sidebar etc in their normal places but on the side screens.
