Using large miners personally

So, how are you supposed to control large miners if you pilot them yourself?

For example, there's Magnetar. It typically has a single mining turret, you go to it and... the turret, when set in "Mining" mode blasts random nearby asteroids while you move. There are no controls. You can't specify which asteroid you wants blown up, or which minerals you want.

This can't be right, can it? Or am I missing anything?

There is no such setting. There's "Attack my current enemy", but the asteroid isn't hostile (and can't be market hostile), so the turret isn't firing when this mode is selected.
