IIRC, a new mouse steering system was introduced in version 6.x. Made it a lot easier for me to direct my ship with the mouse, given the visual aid on the HUD and the "dead" area in the center of the screen. However, with version 7.x, that appear to be gone. I really liked it though.
Or maybe I misremember things. Maybe it was adaptive steering. The further away from the center, the more forceful the steering got. Right now, though, I have a real hard time steering with my mouse correctly. Feels like 100% as soon as I move my mouse. And so, I often find myself over compensating my corrections whenever I do a bad turn. Too much to the left, too much to the right, ... It gets tiresome.

The adaptive mouse toggle and the show mouse direction toggle are both still in Settings, Controls, Mouse Settings.
One thing to check if your mouse seems either full on or full off is that your mouse is not bound to digital game inputs if giving analogue outputs, or vice versa.
There may also be options for controlling mouse sensitivity both in-game and in your mouse control panel.

The adaptive steering in that menu is for the yaw and roll direction, which if enabled makes me more confused than anything. I'm looking for turn strength increasing the further away my cursor is from the center. It's not related to mouse sensibility either, my cursor remains around the center of the screen most of the time. As for the analog stuff, I have no idea.

Right, but what you are describing as wanting is an analogue response - the further away from centre you move your mouse cursor, the faster the turn gets in that axis. However, if your assumed analogue output mouse has been bound to input into digital game inputs in your control profile (ie just registering off or full on - like an on/off button output) then that may not work as you want.
My vanilla game using mouse and keyboard has always done exactly as you want and still does, also I lower the sensitivity of my gaming mouse when I want precision aiming - such as against those mines that you cannot select as target in fragile extraction missions. The low mouse sensitivity mode helps no end for precision work.
