Yes you can recolour elements of the UI individually and create new colours to select from. I'm using it just to make things a bit less grating on my eyes because I dislike the contrast of the new default.
Haven't found any way to save custom sets though so you could not make a full collection of racial ones. It's unfortunate because sometimes while setting up mine, I would like to toggle back to the default to see what it uses for reference. But I can't because that would mean hitting reset.

Re: 7.0 accesibility options
The option is primarily there to help people with colour-blindness or other visual impairments, but if other people want to use it to change the colours used in the UI then I don't see any particular reason why that would be considered "abusing" the feature.

Would be great with some different UI color presets to choose from.

Again, the primary purpose is for accessibility. If people want to use it for other things then that's fine, but we have set up the default colours to the values we think are best for the game. If people disagree with those settings then they are welcome to change them, but we're not going to try and second-guess their preferences with multiple colour schemes.

Re: 7.0 accesibility options
There's no such thing like 'abusing an option'. If something is an option, than any usage is fine no matter what was the initial purpose.
Having devs put time into creating color sets could be considered a waste of time because there would still be players who wouldn't 'like' any of the pre-designed ones.
Possibility to share color sets would be nice, haven't seen it via the UI but I assume that it is possible on the filesystem level.
I'm still very positively surprised that we get such a deep UI color management feature with 7.0

@Caldari Navy, I hope you don't mind me using your thread to ask the following question, but I thought it is something pertinent to it.
I am colourblind so I appreciate the options to directly select a colour scheme for the different types of colourblindness. However, I would much rather manually change the items on a one by one basis.
For instance I had gotten so used to the average price mod - I don't remember who made it

Unfortunately green and yellow on many occasions seem too much the same to me, so I would like to start by changing the good, average, bad colour scheme to something that works better for me. (I think I have figured out what these entries are).
Something else I would like to modify are the cursors/reticles/crosshair... basically the markers used to track the targets.
Now, finally to my question, is there a place where I can learn what each (or most) the items entries correspond to?
