Twice now, one of my freighters has forgotten all its orders.
This time:
It was attacked by an SCA Pillager.
It went into "Flee" state.
I saw its attacker destroyed by other ships.
I comm'd the captain and said "Resume regular orders"
It promptly forgot all its orders and is now in "hold position".
I don't know how I can try to reproduce this as it depends on a freighter with a trade loop in its orders being attacked.
Oh and looking now it has "Flee" in repeat orders. so it's constantly fleeing.
I have no mods installed.
Possible bug with freighter orders.

Is there a 'Resume Regular Orders'? I know there is a 'Proceed with Current Orders' which only applies when waiting for signal, or a 'Resume Normal Duties' which returns the ship to its set default behaviour rather than to any specific set of orders it was doing before.
I'm not sure that either of Proceed/Resume would cancel a global or individual default to flee on attack/harassment, as I think that the flee action has to be overridden/cancelled in ship behaviours/orders first.
I'm not saying that what you tried was not an entirely intuitive attempt, just that it may not work that way in-game.
I'm sure that somebody with more in-depth knowledge of it will put us both straight.
