When X2 was developed / released, widescreen monitors and resolutions weren't that common. The 4:3 aspect ratio was still state-of-the art. Your first screenshot was likely made by playing with two monitors, each one receiving an image signal with a resolution of 640x480 pixel (4:3).

As X2-Illuminatus said, it's a very old game, so you can't really expect it to do everything. I've been playing X2 on a widescreen monitor for some time now. Now that you mention it, my ship cockpit does look a bit wide!

Much more importantly, I'm just really pleased that it still runs perfectly fine on Windows 10. In addition, X2 never crashes and there are only a small handful of in-game bugs. Those little annoying bugs are more than offset by the really big one:
