I would like to see a mod that converts this ship from being a mining ship to one that hauls cargo. Not sure where it would be in the cat files to do so, but it is something I would like to see.

Do you want it to appear as a new ship? I.e. hualer instead of mineral.

Exactly, which I am surprised there was not a hauler variation of this ship done since the Courier has a mineral and a cargo version
