Spent 7 hours getting a station and it's assigned vessels to work properly.
The Magnetar Mineral Miner were the last ships to not work. They refused to mine, assigned or unassigned. When assigned to the station they would default to auto trade. They originally had trade software, removed that. Issue persisted.
Sold them, and built the large Crane Mineral Miners. All problems resolved, worked like a charm.
Anybody else have this happen, or could spare a few million to test if the same happens in their game?

did you put on mining turrets on the ship and give the ship at least 3 mining drones and 3 service crew for those mining drones?

Yes, all the ships have 5 cargo and 5 mining drones. Any hard points that can be mining drills are, and full service crew.
The station has:
It has 3 energy cells, 3 antimatter cells, 3 metal refineries, 5 graphene, 6 engine, 6 hull.
I now have 6 Gas Cranes assigned, and 5 Mineral Cranes.
The last mineral crane is now being set to auto trade as well =(
-It has 8.4million in the account.
-15.5 million expected operating budget.
-5 star manager
-1 3 L/XL ship dock
-6 regular docks
I've read everything I can find on the internet/forums about all this. 99% of it is all hearsay, rumor, and hopes an dreams on how this all works.
No issues like this with a similar station in Holy Vision on a previous save.
