What are the blue, purple, and red signifying? Are there other stations in the grey? What are the honeycomb parts vs the black?
I've been flying for an hour in my starter ship and this is as far as I've gotten. Surely there is a faster way to explore? tab only lasts a few seconds.

There is a legend button in the top right corner of the map window that will tell you what all the icons mean.
Red is minerals
Blue is Gas
Purple is both
Stations can be anywhere in the sector, including "beyond the visible border" (fly towards the edge of the map with your ship and just keep flying, the sector view will slowly zoom out as you fly... and i've found stations out there)

Exploring will get easier as you have more ships with captains. The explore command you can give them isn't working very well, but you can tell them to "Fly To" and set up a waypoint queue for them. They'll fly to each point, and if you grid it correctly, can uncover the map for you. Three or four ships set up like this will quickly uncover each sector quite quickly.
If your flying with conventional drive, you should press H and follow the tutorials. There is a travel mode that will increase your ships velocity to 2000 - 2700m/s (depending on the engine and ship your flying)

Man, so intro to the game is, face some direction, go max speed and come back in 6 hours?
All I can get to is equipment dock and then the next sector over and don't see any gates or other stations. How am I supposed to get started?

Sorry, I'm editing my reply as I'm thinking of things, but your main issue is with the last point I posted, you're not using your travel drive. (Shift +1). Conventional flight is extremely slow... travel drive will get you places quickly.
Try following the tutorials by pressing the H key. They'll give you a basic idea of what can be done... but it doesn't cover everything, unfortunately.

Well crap, that's one of the most important ones.
Here's a summary.
Ship Controls
WASD allow your ship to strafe up, down, left, and right
Z - decrease your speed
X - increase your speed
TAB - booster (this will eat your shields till you have none left then deactivate on its own)
Shift + Space - activate/deactivate fly with mouselook
Middle Mouse Button - fire your weapons at your cursor
Spacebar - Fire your weapons straight ahead (or in a dogfight situation and with the Fight Command Software installed, your weapons will auto-track your target)
BACKSPACE - stop your Ship/spacesuit movement
Ship Modes
Travel Mode (Shift + 1)
- This mode will accelerate your ship forward, as the speed increases your ability to turn decreases. You can turn it on with Shift + 1, and turn it off by selecting another mode or pressing Shift + 1 again. Note: you will slowly decelerate in a forward direction, in order to slow quickly adjust your ships speed with Z or X, or stop it with BACKSPACE.
Scanner ( Shift + 2)
- This mode will allow you to scan ships, stations, and anomalies. The tutorial would have walked you through finding a decryption node on a station that you will fly up to real close and decrypt. You can find these on most stations and some of them will give you a little treat (reward, discount, or a mission (you will find your first plot mission this way for a special reward))
You will know when you've found something because it will sparkle and make an audible fizzling noise.
Long Range Scanner (Shift + 3)
This is the bread and butter of finding things, such as stations, gates, anomalies, abandoned ships, loot crates, and a few things you'll have to find for yourself
. When in this mode you need to press and hold the R key for up to 2 seconds. The longer you press the R key the longer distance it will scan in the direction you are facing (300km max distance). If you hold the R key to long, the scan will fail and do nothing.
As far as I know the scan ring is 360 degrees, so if you scan with the R key, pitch up 20 degrees, scan with the R key, and continue for a full 180 degrees (or so, it seems to work for me this way) you'll have a pretty good chance of hitting most if not the whole area around you.
As you scan for things you will notice on your HUD that little circles will appear and make a ping noise when your scan burst strikes them. Different colored circles signify different types of things (this I'll leave for you to discover, but a hint is the ones that make a louder ping and stay visible on your screen longer may have some interesting goodies)
Stations and Gates in the void areas that your scan burst strikes will show up with a ? on the map. you can select these and target them to show you where to fly to discover what the are.

I wanted to add this to the discussion:
In my experience, Long Range Scan may be 360 degrees for some things but not all. When searching for special objects (that show up with a purple ring instead of a white or gray ring) you need to be pointed in the correct general direction. I am unsure about objects that produce a gold ring, but think they behave the same.
My standard operating procedure is
1) fly to a spot from which I want to scan.
2) turn off mouse control (Shift + Space) to help with keeping the orientation I want.
3) increase throttle for a second and then go back to zero speed - this will line you back up if you are using auto roll
4) use cursor keys to pivot to a direction with a recognizable landmark (planet etc.)
5) scan
6) shift about 45 degrees to right
7) repeat steps 5 and 6 until lined back up with your landmark.
go to the map and see what you have found.
During this pay attention to special objects (purple and gold) and investigate them further. They do not always show up on the map.
