is it possible to adjust the FOV?
In previous X games you could adjust the FOV to something like 110. I don't see an option for that in Rebirth. Is this not possible then?

Not sure 100%, but I don't think it's possible to change FOV. Try taking a look at the config xml file, maybe there is an entry that doesn't appear in the option menu.
A modding guru can tell you for sure, I hope one will not miss your post.

To change the look-around in your Skunk you have to try other cockpits. IIRC, these can be bought/changed by the Ship Technician NPC.
