I have heard that patches after 4.10 only did damage to the game.
For instance, they added damage from ships' engine exhaust, which leads to the destruction of stations during normal docking. And so on... They also make the performance worse.
Is it true? Is it really better to stick with the 4.10 version of the game and not upgrade further?
Did patches after 4.10 break the game?

You have sadly 'heard' incorrectly. Engine exhaust damage (and damage from visible heat flares on some station modules) was already added in version 4.00. It does not routinely wipe out or damage station modules or docks. I have played 4.30 extensively and without issues; indeed it contained some game performance optimisations although the scale of benefit may be gaming system/setting specific. See the actual changes version by version in the changelog here.

First, I would recommend checking the release version changelogs on the forum rather than beta changelogs as the betas may contain stuff that did not make it to release in the same format as the beta, even if at all. I certainly enjoyed playing 4.30 vanilla.
As with any addition, it would be because the devs envisaged it as suitable in their intended gameplay and feasible to code, and not just following the changeable whim of popular demands.
As to mods or edits that change gameplay, that is something to ask about in the X Rebirth Scripts & Modding forum. A quick search there turns up at least this thread. (No further discussion of mods/modding here though please.)
