The Deepwater Hunter (Angler) - Release 60 fish
The Shrimp Tank (Fishmonger) - Sell a lot of fish (I'm not sure how many)
The Sailfin - Catch 250 fish
The Boot Tank - Catch 5 boots
The Jellyfish Tank - Catch the Child of Aquarius and release it to start a boss fight.
The Squid Tank - Catch all the legendary fish.

When it comes to water depth, what counts as deep or very deep, what are the levels? I am unable to find the numbers.

Deepest I have heard of is 1300 units. I dont think there are set depth levels, probably anything deeper than 500 is deep. You do start to see light fading out the deeper you go, but even the deepest depths have various illumination sources at the sea floor.
And the deepest occur in Purple star systems (the ones you have to unlock with the "In Stellar Multitudes" quest, and then they start popping into your galaxy).
Nautilon will get you down there, but if you want to go swimming, equip the Pressure Membrane in your exosuit tech slots to delay dying at those depths, and 3 extra oxygen upgrades.

Edit: Forgot to mention .. When you get to the sea floor in very deep areas, lookout for caves going further down if you are after record depths.

Edit2: If you are asking with regards to fishing, 50 is deep enough water to catch small, medium, large, and colossal fish. Lures help a lot, Bionic for Legendary fish (diurnal or nocturnal or storms), Shadow for all uncommon/rare/legendary nocturnal/storm fish (there's a few bone fish need this Lure). But dont skip just using no lures or bait, might miss common stuff if you want to catch everything (I still have only 3 x boots even after all the fishing done so far).

Now I know why nothing was making sense! My first game was a 'creative start' so there were no repairs, no introductory tutorials, just me and a space ship on a planet... Restarted and finally 'see' the game and how technologies and crafting work. Totally different experience, and far more enjoyable. Yay!

Ah, yes, Creative mode is give me everything for people who dont wish to be hampered by everything they have done before or start building mega everything immediately. Normal mode is where everyone should start for the first time. You probably notice now (depending on the harshness of the random starting planet) you need to do things a bit quicker just to survive the opening moments.

Terrain manipulator is your friend at the start, make like a mole to give yourself breathing space and time to think :)

It was a real challenge. I managed to fall off a cliff in the dark, trying to find the ship, and it was just lucky use of the jetpack that kept me alive. And I couldn't find shelter in the storm, and didn't have the terrain manipulation tool, so I was stumbling about looking for sodium sources, hoping they'd keep me alive until it passed. (I think they powered by suit's defences?) It felt like a genuine victory when I got the ship fully repaired. Yeah, dumb mistake to start with Creative mode... I didn't read what it meant, and it left the game without any real gameplay elements in the early hours.

But now, yeah, loving it.

Suit defences have quite a lot of upgrades to be discovered.
Forgot the Terrain Manip' is not available at start, so yeah its a case of mine ferrite, fix scanner ASAP, run for ship and/or sodium, or cave of some kind, whichever is more immediately needed. Press C to scan for local resources on way to the ship (thats why fixing the scanner takes priority, without it you might not make it to the ship). Some random planets you get dumped on can mean you are dead within minutes, my last start was one of the Expedition starts (in a different save slot) and the weather was immediately ripping my suit/skin to bits :D

Yeah, I'm properly hooked now. I love how the 'tutorials' don't feel at all like tutorials, and how the game grows organically around you as new layers of gameplay are revealed. After the aberration that is the Creative start, I'm now wooting at every great milestone, and am just about to discover the first source of antimatter for my just installed hyperdrive, or whatever it is called.

I can see me playing this game well into my dotage.

I have one more tip, that a lot of people dont realise:
As you are probably finding out inventory slots are in short supply, so the quicker the better you get more.
Maybe a bit of a spoiler here ..

On some planets you will randomly find Drop Pods, but they are often not easy to find and a bit of a process gathering resources to repair the drop pod to get an inventory slot, these drop pods look like an upside down ice cream cone with a door in one side. Easier is ..
You can get one easily at most space stations for your Exosuit, find the guy selling Exosuit upgrades and somewhere near him there's a thing you can click on to buy more slots.
You can only do this once per system, but ..
This is the spoiler bit - There is another type of station you can summon into the same system. Using the quick menu (x). Once you have that ability you will know what I mean. There are 4 upgrade vendors on that station too, and one has an Exosuit upgrade thing near him, which again can only be used once per system.

So you can get two inventory slots per system you are in, plus whatever Drop Pods you randomly find.
Something else not immediately obvious, when using the suit (or any other) upgrade, it will highlight a new slot you can buy in the Inventory slots, at this moment you can select with mouse or space bar (I think, its been a while since I had to do it) the tech inventory.

Sodium you can get from processing Cave marrows.

I'm taking a break for a few days as I seem to have done most things. I'll come back to do any specific expeditions. (which are well worth doing).

One thing I did wonder; if you run out of Carbon, and you don't have enough charge to get more, is that game over? Is there an error trap for that?

Hmm never had to do that, always have a good stock of it, but just ram some trees with a Roamer, or use your Starship to blast trees, or buy some from NPC pilots landing at stations/use the Trade console at stations.
