1. Is it possible to hook your own menus in place of vanilla ones? For instance, replacing factory menus with your own?
2. Is it possible to edit contextual menus? For instance, adding other menus to the top-left dropdrown pilot menu?

Not all the menus can be replaced, but alot of them can.
there are script commands available to set a menu script file to replace an existing menu. My Property owned script demonstrates this, by replacing the property menu
and most of the new menus added are all scripted
you can create your own context menus and add them to your own menus.
and you can add custom entries to various other context menus, include most of the sidebar menus, and the object menus (ships/stations)
you cant remove or replace existing entries however
