Where is this option to direct which account the traders will use ?

They will use players account unless they are home-based to a station. When they are home-based to station they use the stations account

yes makes sense but there was an option in prior chapters that let the player set it

There wasn't such an option. Maybe for something like the Commercial Agent. But not in the vanilla game.
