where can I find the global commands?
And can I change what info I get on the map? I can toggle trade but can I turn of crew information?

On the player information tab (looks like a person), empire overview (crown symbol in top left of screen), third option from the bottom, is global standing orders.
On the map screen, filter icon in top right, go to other filters (... icon), you can turn off crew information.
