How do I name my Pilot on Steam version (for Script Editor)

it just gives me a new game without naming my pilot. I want to name myself Thereshallbewings to use the script editor.

Has Steam blocked this in Version 2.5 to prohibit cheating?

You were never able to choose a pilot name at the start of the game. The Pilot name at start is bound to the game start. However, you can always change your pilot name in the game, for example to activate the Script Editor as described here.
