How do I transfer crew from the Skunk to another ship? All I seem to be able to find is the ability to fire them, which means that I'd have to only recruit crew after I've obtained a new ship.

Assuming you're trying to put them on a freighter - dock on the freighter, hit Enter-5-2 (from memory... you're remote calling your crew), pick a person, and tell them to "work here".

Not sure it is possible in 2023.

I had high hopes for Rebirth. A more linear main story! A copilot! No longer alone in the universe!

But alas the simplest things seem impossible to me in this game.

Hire 8 Marines for a mission, but my ship only holds 6.

I can't seem to assign them to other ships.

If it is possible I can't figure it out.

Back to X4.

It seems more a touch more intuitive.
At the very least I can find x4 help on the internet.
Not so for rebirth.
